Blueberry Oatmeal Protein Muffins

Add dry ingredients to large bowl and mix well:

1 cup oats

1 cup whole wheat flour

1/2 cup sugar or Splenda

3 teaspoons baking powder

1 scoop protein powder (I used banana creme)

1/4 teaspoon salt

Mix in:

3 egg whites
1 cup almond milk
2 tablespoon butter, melted
1 teaspoon grated lemon peel
1 teaspoon vanilla extract

Fold in

1 cup fresh or frozen blueberries (do not thaw first if using frozen)

Scoop into lined or greased muffin pan

Bake in 400 degree oven for about 20 minutes or until golden brown.
