Namoura (Semolina Cake)
Preheat oven to 375 degrees. Grease a 13 by 9 pan with tahini.
In a large bowl mix together 4 cups semolina, 1 cup sugar 1/4 tsp baking soda, and 1 Tbsp baking powder.
Melt 1 1/4 cup butter and mix into semolina. Add 1 1/4 cups yogurt and mix until combined.
Press mixture into prepared pan. Slice into diamond shapes and press either almonds or pistachios into each diamond.
Bake about 35 minutes until golden brown.
While Namoura is baking, prepare syrup. Bring 1 cup of water to a boil. Add 2 cups sugar and stir until completely dissolved. Turn off heat and stir in a couple drops of lemon juice and about 2 tsp rose water.
Remove namoura from oven and immediately pour syrup evenly over top.
Serve cold or room temperature with extra syrup if desired.
