Vegetarian “Chipotle” style bowl
We Love Chipotle! But honestly, there are not really any fancy, secret ingredients, well, maybe the cilantro lime tortilla chips 🙂
I do usually have ingredients that would work at home, so I thought I would make some for dinner. Of course you could use thinly sliced steak, chicken, or ground beef or turkey. Today I used Boca Burgers, because that’s what I had on hand.
Begin by cooking about 3 cups of brown rice according to package directions.
Saute red or yellow onion (about 1/2) in a little bit of olive oil until translucent
I then added 4 chopped Boca Burgers (here you could use about 1/2 pound of another meat) along with a tablespoon of taco seasoning, about 1/2 tsp granulated onion, salt and pepper.
Remove the kernels from 2 cobs of corn and add it along with a drained and rinsed can of black beans to the burger mixture. Continue cooking over medium heat until cooked through and flavors are blended.
When the rice is finished, zest one lime, and squeeze the juice from 1/2 into the rice. chop fresh cilantro (a little or a lot) and toss the rice
Layer on a serving platter, or bowl
Cilantro-Lime brown rice, “meat” and bean mixture, shredded lettuce, tomato or grilled veggies if you want, salsa, guacamole, sour cream or greek yogurt, shredded cheese.
